Cold Chain Training in the DR

USAPEEC, with sponsorship from the United Soybean Board and support from USDA, recently conducted a seminar, “Poultry Cold Chain Management and Its Effects on Quality and Safety,” at which the topics included: handling and storage of refrigerated and frozen products (raw and finished); evaluation of the quality of raw material; new and improved freezing and thawing technologies; and the effect of temperature on meat grinding and impact on poultry safety and quality.
